Cheesy adventures start here!  At The Fine Cheese Co. we’ve always taken cheese seriously, with Ann-Marie owning The Fine Cheese Co. Shop in Bath for over 20 years.  Since then we’ve grown to export, mail order online and wholesale the best in British, French and European artisan cheeses.  We love animal rennet, traditional unpasteurised cheeses from the UK, but that won’t stop us buying any type of cheese-as long as it’s brilliant!
So where do I, Andy Swinscoe, fit in?  A young pretender on the cheese scene I joined The Fine Cheese Co. in December 2010, with the remit to constantly improve our knowledge, cheese care and quality; as we move to a specially designed warehouse in which we can store and mature our cheeses better.
Some call me a cheese affineur, some a cheese expert, I prefer cheese geek.  It all started when I worked in Michelin Starred Restaurants and fell into the world of cheese boards and trolleys.  Since then I completed a degree in Culinary Arts, studied with the School of Artisan foods, worked for cheesemongers and became a QEST Craft Scholar for cheese maturing.  However I learnt my most working for Hervé Mons, the ‘god’ of French cheese.  I carried out a 6-month affinage apprenticeship deep within his cheese caves in central France.
Hopefully over the coming months I’ll be visiting cheese-makers, making cheese and discussing cheese types and production.
And of course through this newly developed cheese stories area of our site I’ll be keeping you updated!
