| Choosing and caring for cheese |
Individual cheeses (soft, or hard) on the whole last better than cut cheeses and you can expect a natural shelf life of 2 weeks from receipt on all the individual cheeses we deliver. (Exceptions are very fresh goats' milk cheeses like Perroche and Innes buttons, which if not eaten within 3/4 days may be frozen very happily)
Hard cut cheeses like Cheddar and robust blues like Stilton, if carefully wrapped and stored in waxed paper, or foil, keep for a week, or more.
Soft cut cheeses like Gorgonzola and Brie de Meaux are more temperamental. As a result we advise that you only order what you are planning to eat in the next 3/4 days, or consider ordering instead cheeses with a better keeping quality like Coulommiers (whole baby brie), or a baby Cornish Blue as an alternative to Gorgonzola.
