This is a wonderful hard goats' milk cheese, which is Cheddar-like in every aspect of its personality: from its earthy smell to its dense creamy texture. Every cheese is hand-made and cloth-wrapped by one of the nine skilled cheese-makers on Mary Quickes' farm in the village of Newton St Cyres, deep in the Devon countryside.
