Intensely concentrated, fruity, sweet but tangy, they're modern versions from traditional fruit purees such as the English damson cheese and membrillo, a quince paste eaten in Spain with manchego.

We're all used to memblio, the Spanish quince paste served with hard cheeses such as manchego; in fact, the idea for a sweet solid preserve spread from Spain/Portugal across Europe in the 17th century, using whatever local fruit would jell.The Fine Cheese Co have revived it. Good instead of pickle with cold meats, too.
