RED WINE FARMER
250g Cow, Raw milk
A full-flavoured, mountain cheese, washed in local red wine, with a full-throttle flavour.
The wine wash adds pungency but the cheese is recognisably Swiss, with a sweet creamy back note and silky-smooth texture.
It packs a powerful punch.

INANNA
200g Sheep, Thermised
Inanna was the Sumerian Goddess of Love whose great passion for cheese led her to choose a divine shepherd for her husband.
Her devotees worshipped Inanna by leaving daily gifts of cheese at her great temple.
The Parra family make this cheese in the dairy on their vineyard from the milk of their Manchega sheep.
They then bath it in their own wine, which imparts a fruitiness to the smooth, sweet cheese.
A cheese fit for a Goddess!

RENEGADE MONK
220g Cow, Pasteurised, Vegetarian
A fascinating cheese from new cheesemaker, Marcus Fergusson.
Made from local organic milk in tiny batches.
The rind is washed in ale, and blue cultures are used to enhance the flavour, even though the cheese can remain vein-less when ripe.
Pleasantly sweet and slightly floral, with a very subtle blue undertone.

CABRA AL VINO (DRUNKEN GOAT)
250g Goat, Pasteurised
A young, fresh-tasting goats’ cheese, bathed in La Mancha D.O. red wine.
The relatively high acidity of the wine bath means that the cheese mostly retains its deep purple coat.
The fruity flavours of the wine penetrate the surface of the snowy white cheese, giving it a bright, fresh taste and an aroma of berries.
