Made in London from 100% Lacaune sheep’s milk, by Anthony Heard, and inspired by the traditional cheesemaking skills of his Cypriot Grandmother.
This cheese is the offspring of its more famous Cypriot parent, but is even better than any commercially available cheese of that name. Made with raw milk and natural cultures, the process takes a full 48 hours. The curds are basket drained and then cooked in their own whey (and are hence pasteurised). Once hand- salted and folded, the cheeses are ready for eating. Char-griddle to create a richly caramelised, savoury crust and a pillowy, marshmallow centre.
