LAMB LEER
300g - Sheep, Thermised, Vegetarian
Made in the Chew Valley and named after a cavern in the nearby Mendip Hills, Lamb Leer is a delicate sheep’s milk cheese. The bloomy white coat conceals an intriguing interplay of textures. The paste just under the rind becomes supple as it begins to break down, while the core remains crumbly.
The flavour is a delicate balance of sweetness with a hint of almonds and a more fruity acidity.
Second tier
TUNWORTH
250g - Cow, Pasteurised
Tunworth has the thinnest possible rind, an undulating surface, and a profoundly fruity tang - enough to convince a Frenchman that this was made on his terroir. The cheesemaker, Stacey Hedges, uses a traditional recipe that not many Camembert makers use, due to the difficulty involved. The cheesemaking process involves the curds being gently hand-ladled into moulds and before that a slow, overnight acidification.

CORNISH BLUE
2.2kg - Cow, Pasteurised
A cheese generally made with vegetarian rennet, but we only buy the few batches that Phillip makes with animal rennet. The difference is phenomenal. Our version has a deeper flavour, and the rich, creamy paste is in perfect balance with the gentle tang from the blue veins.

DELICE DE BOURGOGNE
2.2kg - Cow, Pasteurised
Enriched with double cream for a rich texture and buttery taste. This delicate cheese has the texture of ice cream, and is covered with a thin rind and a light white coat. The interior is velvety, sumptuous and mellow.

DUCKETT’S CAERPHILLY
4.2kg - Cow, Raw Milk
Caerphilly is an acidic, lactic cheese, with a crumbly interior. Traditionally it was made in Wales, but Somerset farmers began making Caerphilly in the early 1800s, when demand exceeded supply in Wales. Some Cheddar-makers in the county chose to make Caerphilly in preference to Cheddar, as it is matured for around eight weeks, rather than the year for farmhouse Cheddar.

6.5kg - Cow, Raw Milk
Made by George Keen and his family, Keen’s Extra Mature Cheddar is moist, tangy and powerful. At least an extra six months spent in the family’s maturing rooms gives this Cheddar even more stunning complexity and richness.
