To pair with Camel Valley Bacchus Dry 2018, England
Brightwell Ash - 150g
Goat, Raw Milk
An ashed disc with a beautifully thin, wrinkled coat and a dense paste, with a texture reminiscent of the finest ganache.
The flavour is every bit as good: nutty, complex and lingering.
To pair with Monti Langhe Chardonnay 2016, Italy
Tunworth - 250g
A pasteurised English Camembert-style cheese, with the thinnest possible rind, an undulating surface, and a profoundly fruity tang - enough to convince a Frenchman that this was made on his terroir.
To pair with Karl May Gutswein Pinot Noir 2018, Germany
Affineur Walo Red Wine Farmer – 250g
Cow, Raw Milk
A full-flavoured, wine-washed, mountain-style cheese, Affineur Walo's Red Wine Farmer packs a serious punch.
To pair with Limited Release McLaren Vale Shiraz 2018, Australia
Colston Bassett Shropshire Blue - 250g
Cow, Pasteurised, Vegetarian
Made identically to Stilton, except for the addition of annatto, a natural dye from South America found in traditional British cheeses such as Cheshire and Red Leicester. After the cheese is pierced, the blue mould forms, producing the gentle marbling that contrasts with the deep red hue of the cheese. Although usually considered tasteless, annatto is said by some cheesemakers to lead to a nuttier, earthier flavour.
The Heritage Range Charcoal Squares - 140g
All-butter charcoal crackers, with a crumbly texture and delicate flavour. A stylish partner for cheese.
