Bondon Fleur de Sel
Firm and moussey. Approachable goatiness, ‘walnutty’ with a salty finish.
A twist on a classic from Poitou-Charentes, salted by hand with Fleur de Sel. These cheeses are ripened to perfection in Rodolphe le Meunier’s caves in Touraine, where they develop a thin rind with occasional grey-green speckling.
