CROPWELL BISHOP STILTON
500g Cow, Pasteurised
A classic, hand-ladled Stilton, made with animal rennet, as tradition dictates.
Smooth, creamy and open-textured, the cheese is buttery and complex, with a slightly spicy long finish.

WESTCOMBE CHEDDAR HAND SELECTED
500g Cow, Raw Milk
A truly artisan Cheddar with a deep and complex flavour, made by Tom Calver.
Hand-selected by us, together with Tom, the different batches are tasted until we find the ones that match the perfect flavour profile.
These are chosen to be matured and released when they hit their peak, when a deeper, fuller flavour has developed.
The cheese has a wonderfully full and complex savoury flavour, with a slightly tangy finish.

INNES BOSWORTH ASH
150g Goat, Raw Milk
A dense and silky, raw goats’ milk log, made with great skill by Joe Bennett.
Rolled in ash and matured for a rich and satisfying flavour.
With complex layers of savoury and earthy tones, it is a finely balanced and perfectly judged cheese.

BATH SOFT
250g Cow, Pasteurised
A mild and creamy, organic, Brie-style cheese, made to an original 19th century recipe
from the milk of the farm’s own herd, by Graham Padfield at Kelston, Bath.

KIRKHAM’S LANCASHIRE
500g Cow, Raw Milk
A traditional, crumbly, raw milk Lancashire, with a wonderfully moist, pressed texture, and a mellow tang.
The last Lancashire made to the traditional two-day curd method, it has the desired “buttery crumble” and is clean and lactic in flavour.
