Cornish Yarg is loosely based on a Caerphilly recipe, and it is wonderfully crumbly and lactic. Wrapped in edible nettles that protect the cheese, the nettles allow this cheese to breathe and develop specific moulds that encourage the beautiful almost lace-like appearance of the rind.
