The history of Veneto’s “Hidden Cheeses” is an exciting one, with cheeses buried in pits, spent grapes, and haystacks to keep them from greedy landlords, eager brigands, and raiding armies. The Perenzin family are steeped in this regional intrigue, having made and aged cheese in the Treviso village of San Pietro di Feletto for five generations. Capra Fieno is a modern interpretation of this tradition, no longer in danger of being stolen. The organic goats’ milk is sourced from the Dolomites surrounding Belluno, with the hay originating just further into the mountains in Trentino-Alto Adige. The resulting cheese is wonderfully scented, with the herbal and biscuity aromas of the hay bursting forth. This exists in balance with the milky, approachable, and slightly nutty flavours of the mature goats’ cheese, culminating in a bite that is at once sweet and savoury.

*A whole Capra Fieno weighs approximately 2.5kg. Smaller weights are a cut of a whole cheese.
