250g - Cow, Raw Milk
Made by Joe Schneider. Raw milk, meticulous attention to detail, a long, slow acidification, and hand-ladling make Stichelton a revelation. The cheese is perfectly balanced: the rich and creamy paste broken down by the blue veins is sweet, while the rind imparts a more savoury character.
250g - Cow, Pasteurised
A full-flavoured, creamy, organic, Brie-style cheese made to an original 19th century recipe. Notes of mushroom mingle with a slight citrus twist.
250g - Sheep, Raw Milk
Made at the magnificent and aptly named 16th century Ram Hall, from the milk of the Fletchers’ own flock of East Friesland ewes. It is a magnificent looking cheese, and is sweet and nutty, with a hint of caramel and a definite tang on the finish.
300g approx- Cow, Pasteurised
Made by David Jowett, from the milk of a tiny, mixed herd of cows - predominantly Brown Swiss, but other breeds, such as Ayrshire, Dairy Shorthorn, Guernsey and Jersey, are thrown in for good measure: a compendium of perfect dairy breeds! Wrapped in spruce bands, the cheeses ripen to glorious maturity. When ready, the paste is glossy, rich and voluptuous, and the taste is buttery, complex and resinous.
