OLD ROAN WENSLEYDALE
250g - Cow, Raw Milk
Modern Wensleydales can be sharp, acidic and crumbly, but Old Roan is an altogether more interesting cheese. Made traditionally on the family farm with raw milk; it is rounded and smooth, rich and buttery, but balanced with a refreshing acidity. Matured for three to four months, more mineral tones appear towards the clothbound rind as the cheeses develop their full potential.

The little sibling of the classic Camembert de Normandie. It is just as delicious but less rich and intense. A golden, buttery interior with a delicate aroma of hazelnuts.

The spice mix used in this salami is based on a centuries-old Indian pickling recipe. Fennel seeds, Telicherry black pepper and fenugreek add an intriguing flavour to this salami with great complexity.
