STONEY CROSS
200g Cow, Pasteurised, Vegetarian
A handsome little cheese with a natural rind. The interior is a perfect balance of sweet, buttery tones and a slightly brighter, lactic top note. Natural aging creates an earthy finish, which brings greater complexity to this smooth and supple cheese.

This cheese contains an enzyme called Lysozyme, which helps stabilise the active starter cultures and which derives from egg white.

GOLDEN CENARTH
250g Cow, Pasteurised, Vegetarian
Made by Carwyn Adams on the family farm.
Smooth and supple, Golden Cenarth is washed in cider to develop its characteristic coat and unmistakable seductive pungency.

INNES CHILCOTE BRICK
150g Goat, Raw Milk
Joe Bennett produces this exquisite cheese on the family farm from the milk of his own herd of goats.
Made to a slow and gentle recipe that perfectly captures the quality of the milk, the brick is a beautifully made cheese.
The thinnest possible rind encases a dense, rich core, and the flavour is sweet and delicate with a bright acidity.

BRILLAT SAVARIN
100g Cow, Raw Milk
Made by the Rouzaire Family. It is lusciously creamy and sinfully rich.
The classic and original triple-cream cheese.
Invented in the late 19th century, and named in homage to the late, great gastronome Jean Anthelme Brillat-Savarin.
