240g – Goat, Raw Milk
Wrapped in a chestnut leaf, this goats’ cheese is nutty and complex. Applied when the cheese is fresh, the leaves are crucial to the development of the cheeses. They absorb moisture from the cheese, which is then gradually returned during maturation, allowing the paste to break down under the leaf.
QUESO DE PRIA TRES LECHES
250g – Cow, Sheep, Goat, Pasteurised
Tres Leches is Spanish for ‘three milks’, and the mixed milk gives this cheese a deep complexity. The blue veining offers a gentle, warming spice and the light smoking of the rind a third layer of flavour.
90-100g – Cow, Raw Milk
Julie Cheyney places young St. Judes in wooden trays, and washes them with brine to develop their blush pink coats. The paste is smooth and silky, while the flavour is buttery, fruity, complex and lingering. Spoon it directly from the box and savour every morsel.
PECORINO DI FILIANO
250g - Sheep, Raw Milk
Full-flavoured and robust, with a crystalline texture and a sweet, tropical-fruit finish. Pecorino di Filiano is made in moulds lined with rushes, and matured in natural tuff caves. After 20 days, the rinds are rubbed with extra virgin olive oil and wine vinegar.
SPARKENHOE RED LEICESTER
250g - Cow, Raw Milk
Sparkenhoe, made by David and Jo Clarke, is England's only raw milk Red Leicester cheese. The cheese is creamy and mellow, with a slightly flakey texture. The addition of natural annatto gives the cheese its deep orange-red colour.
MOSCATO GRAPE NECTAR - 140g
Grape ‘must’ is combined with sugar to create this unique and ancient grape ‘nectar’ from Pantelleria, off the coast of Italy. It has a honeyed sweetness, wine fragrance and a thick, runny consistency.
