LA TUR 240g
Cow/Sheep/Goat , Pasteurised
Alta Langa’s most famous creation.
La Tur has an ice-cream texture and the richness of a triple cream.
It is straw-coloured, with a delicately bloomy rind.
The mixed milk adds a pungency of aroma, and a depth and piquancy of flavour.

STÄRNÄCHÄS EXTRA MATURE
500g Cow, Raw Milk
Produced at the foot of the Säntis mountain near Appenzell.
The texture is slightly supple and smooth, with only the occasional crystal and a few small holes found within the paste.
With a subtle underlying sweetness and a rich, deep flavour, it is decidedly more-ish.

MOTHAIS SUR FEUILLE
200g Goat, Raw Milk
A historic cheese, saved by Monsieur Georgelet from extinction.
The ‘feuille’ is a chestnut leaf, harvested from his land in autumn, and applied when the cheese is fresh.
The aged cheeses have hints of undergrowth and nuts, so providing a rich range of flavours.

QUESO DE PRIA TRES LECHES AZUL
500g Cow/Goat/Sheep, Pasteurised
Tres Leches, meaning ‘three milks’, is made at the edge of the Picos de Europa National Park.
The mixed milks give a deep, complex flavour; the blue veining a gentle, warming spice; and the light smoking of the rind a third layer of flavour

QUADRELLO
500g Buffalo, Pasteurised
Similar in style to Taleggio, but made with the finest buffalo milk.
Matured in traditional open-stoned caves, the cheese is rich and buttery, with the savoury tones characteristic of washed rind cheeses, expertly balanced by the sweetness inherent in buffalo milk.
