The ‘feuille’ is a chestnut leaf and helps in the maturation, allowing the paste to break down under the leaves.
The aged cheese has hints of undergrowth and nuts.

SAUCISSON VIN CAHORS

Le Caroylais artisan salami with Cahors wine.
Henri Manhès makes wonderful saucisson, using artisan techniques to naturally cure and gently age his hand-selected pork.

CAMEMBERT DE NORMANDIE

A raw milk Camembert, hand-ladled to produce an undulating surface and a powerful, fruity flavour.
