500g - Cow, Raw Milk
A truly artisan Cheddar with a deep and complex flavour. Hand-selected by us, together with Tom, the different batches are tasted until we find the ones that match the perfect flavour profile. These are chosen to be matured and released when they hit their peak, when a deeper, fuller flavour has developed. The cheese has a wonderfully full and complex savoury flavour, with a slightly tangy finish.
400g - Cow, Raw Milk, Vegetarian
The Jersey cows that make Sharpham Rustic graze on water meadows in the beautiful Dart valley. Their rich, unpasteurised milk is used to create this fresh and buttery cheese. Made by Debbie Mumford and Mark Sharman.
SPARKENHOE SHROPSHIRE BLUE
300g - Cow, Raw Milk
A unique cheese, hand-made by Will Clarke, from the family's own pedigree Holstein-Friesian cows. It has a beautiful, peachy coloured paste, shot through with meandering blue veins, and a mellow rich and buttery taste.
180g - Goat, Pasteurised
Award-winning Dorstone cheese has a curd that's snowy-white, a texture like ‘ice cream’, and a flavour which is mellow and creamy with a lemony freshness.

A fabulously full-flavoured Brie-style cheese, hand-made in Suffolk by Jonny Crickmore from the milk of his own herd of Montbeliarde cows. A stunning cheese, with a rich, full, earthy flavour and a lingering finish.
