Four-tiers of style, grace, and, of course, flavour. This cake boasts a perfect marriage of French and British cheeses. On the British groom’s side there is a crumbly and delicate Cornish Yarg, wrapped handsomely in nettles, and a top hat of ashy goats’ milk cheese. The French bride’s side features an earthy and subtle Tomme, along with a famously rich and creamy offering that is appropriately dressed in white. Serves 55 to 80 People.

Top tier
DORSTONE
180g - Goat, Pasteurised
Made by Charlie Westhead. Dorstone is sprinkled with ash, and then ripened. When you cut through the matured cheese, it has faint veining reminiscent of Carrera marble. The curd is snowy-white, the texture ice cream, and the flavour mellow and rich.

Second tier
BRILLAT SAVARIN
500g - Cow, Pasteurised
Made by the Rouzaire Family. It is lusciously creamy and sinfully rich. The classic and original triple-cream cheese. Invented in the late 19th century, and named in homage to the late, great gastronome Jean Anthelme Brillat- Savarin.

Third tier
TOMME DE SAVOIE
1.6kg - Cow, Raw Milk
A superb example of the genre: supple and winey with a slightly earthy finish. It has a distinct, thick grey rind, with a yellow or red moulding, and a straw-coloured curd. The flavour is soft, fruity and slightly salty.

Bottom tier
CORNISH YARG
3.5kg - Cow, Pasteurised, Vegetarian
Invented in 1984, Yarg has gone on to become a modern classic in British cheese. Loosely based on a Caerphilly recipe, the cheese is wrapped in nettle leaves to preserve its fresh, bright, lactic taste.

Neal’s Yard Creamery is not in London. Newly independent, 30 years ago it settled in a beautiful location on Dorstone Hill, overlooking the River Wye in Herefordshire. The cheese takes its name from this rural idyll.
