The snowy white paste has flavours that are grassy, bright and refreshing, which make a pleasing foil to the oh-so-slightly peppery flavour of the mottled grey rind. As the cheese breaks down, more delicate, floral tones become evident with a subtle sweetness that one might be tempted to say provides the faintest whisper of the taste of Parma Violets. Though, of course, this cheese is far too ladylike to countenance having anything of the kind suggested in her presence. As for the aroma, it has an invigorating mustiness to it, of the kind you might find in a well-stocked wine cellar. A far more appropriate comparison for a cheese of such cultured elegance.
*A whole Lady Grey weighs approximately 1.6kg. Smaller weights are a cut of a whole cheese.
We unashamedly source, care for and sell the best cheese, because that is what we believe in. Our trained cheesemongers cut every piece to order, by hand, and wrap it in our waxed paper. We do this because it is most respectful way to treat this precious food.

The Fine Cheese Co. is a maturer, wholesaler, retailer and exporter of artisan British cheeses. We are based in historic Bath, founded by the Romans and famous for its beautiful Georgian architecture - alongside Venice the only World Heritage city in Europe.
We have been cheese specialists for thirty years, and from the start we have nurtured and supported the cream of British cheese-makers. We stock over a hundred hand-made British cheeses: from classic gems such as Mrs Kirkham's Lancashire, a traditional cloth-bound territorial cheese, to Baron Bigod, a raw milk Brie-style cheese.
