Between October and April, when the cows have come down from their high pastures for the winter, we have the pleasure of the company of a unique cheese. Made in the shadow of the Mont d’Or in France, this cheese has become famous throughout the world. It has a melting, voluptuous texture, and a resinous flavour from the spruce bark that encircles it.

CAMEMBERT DE NORMANDIE
250g - Cow, Raw Milk
Absolutely the real thing. Made from raw milk that is hand-ladled to produce an undulating surface and a powerful, fruity flavour. One of the last remaining raw milk Camemberts, it is a divine example of this famous cheese.
200g - Goat, Raw Milk, Vegetarian
Made by Fraser Norton and Rachel Yarrow, who only decided to become cheesemakers in 2014. At the same time, they set about building up their own herd of goats.
The cheese is made to a very slow, lactic-set recipe, with only a tiny amount of French thistle rennet coagulant. It has a fabulous texture: smooth, rich, and mouth-filling, and a thin, beautifully wrinkly coat that develops natural spots over time. The taste is great too: sweet, almond-y and complex.
80g - Cow, Pasteurised, Vegertarian Rennet
Rich, buttery, sweet and gentle. The cheeses are hand-pierced to allow small pockets of blue to form in the creamy paste, and tiny blue veins to appear through the spaces between the curds. Claire Burt’s skill in creating a tiny blue cheese is not easily matched.
250g - Cow, Raw milk
Steeped in oil and infused with thyme, garlic, bay and pepper. The rich and creamy cows’ milk makes Graceburn softer and more melt-in-the mouth than traditional Feta.

SERRATS WHITE TUNA NECK FILLETS - 210g
Only smaller pole-caught tuna are hand-selected on a daily basis. The meat is smooth, white and firm but never dry. The production is fastidious: tuna are washed four times and put in special tuna ‘Jucassi’ to make sure the meat is perfectly clean. The tuna must then remain in the can for one year to mature and soften. Get ready for the best tuna sarnie of your life!
