- Blu di Bufala by Quattro Portoni
In the hilly landscape of Parco del Serio, Bergamo, you can find Bruno Gritti and the Buffalo farm of Quatttro Portoni. Where there is Buffalo, one would normally think of Mozzarella, but here Bruno has created a small range of modern buffalo cheeses inspired by their traditional cousins.
Buffalo milk has less cholesterol than cows’ milk, and can be easier to take for those who have dairy intolerances. The subtle creamy flavour has a distinctive sweet-meatiness that is both delicious and moreish!
A highly acclaimed blue cheese that has a number of awards in the prize cabinet, including gold at Mondial du Fromage 2013 and 2015, and World’s Best Italian Cheese at the World Cheese Awards 2012.
Almost a perfect cube, this light-flavoured blue cheese has a sweetness that perfectly accentuates the aromatics of the penicillium roqueforti, while the slightly open texture keeps its shape and melts in the mouth.
We unashamedly source, care for and sell the best cheese, because that is what we believe in. Every day of dispatch one of our trained cheesemongers cuts every piece fresh, by hand, and wraps it in our waxed paper. We do this because it is most respectful way to treat this precious food.
