Where there is Buffalo, one would normally think of Mozzarella, but here Bruno has created a small range of modern buffalo cheeses inspired by their traditional cousins.
Buffalo milk has less cholesterol than cows’ milk, and can be easier to take for those who have dairy intolerances. The subtle creamy flavour has a distinctive sweet-meatiness that is both delicious and moreish!
Casatica is semi-soft cheese that has a full bloomy rind to help protect it though the eight-week maturation period.
When the cheese is young, the flavour is open and grassy with a pleasant springy texture, and, when it is ripe, the full quality of the milk shines through, giving a silky, creamy texture, particularly around the rind, with a fuller and rounder flavour.
We unashamedly source, care for and sell the best cheese, because that is what we believe in. Every day of dispatch one of our trained cheesemongers cuts every piece fresh, by hand, and wraps it in our waxed paper. We do this because it is most respectful way to treat this precious food.
