Tres Leches, meaning ‘three milks’, is made with mixed milk, and is what the Spanish call a “semi-blue” cheese.
It is made with 50% cows’ milk, 30 to 35% ewes’ milk and 15 to 20 % is goats’ milk. The cheese was created by the Inés Granda family on the Asturias coast, near Llanes, just at the edge of the Picos de Europa National Park. Although Tres Leches is a new cheese, the family has been making cheese for three generations.
They started with fresh cheeses and moved on to smoked. But recently they were inspired to make a cheese that would be a homage to the traditional cheese of the Picos de Europa area, Gamonedo.
The mixed milks give a deep, complex flavor; the blue veining a gentle, warming spice; and the light smoking of the rind a third layer of flavour.
