From the wooded mountains of Picos de Europa. Cave-matured for longer than English blues, resulting in a powerful, spicy cheese. When deemed ready, the cheeses are wrapped in maple leaves. The mature cheeses are firm but creamy, and spicy and strong. A modern, Spanish classic.
RED WINE FARMER
250g – Cow, Raw Milk
Recognisably Swiss, with a sweet, creamy back note and a silky-smooth texture. This pungent cheese is washed in local red wine and has a full-throttle flavour that seems to grow and grow.
250g - Sheep, Thermised
An extra mature Manchego, the cheese has a crystalline texture and an intense, fruity, powerful flavour.
