From the wooded mountains of Picos de Europa. Cave-matured for longer than English blues, resulting in a powerful, spicy cheese. When deemed ready, the cheeses are wrapped in maple leaves. The mature cheeses are firm but creamy, and spicy and strong. A modern, Spanish classic.
RED WINE FARMER
250g – Cow, Raw Milk
Recognisably Swiss, with a sweet, creamy back note and a silky-smooth texture. This pungent cheese is washed in local red wine and has a full-throttle flavour that seems to grow and grow.
LOMO DEL PALO
250g - Sheep, Raw Milk
Lomo del Palo, made from the milk of Canaria ewes, is bathed in oil and toasted corn flour to develop its characteristic rind, which imparts powerful notes of rich roasted caramel to the sweet and buttery interior.
