Pavé d’Auge is lightly washed to create a salmon-pink rind, and there may also be a light bloom of white. The paste is smooth and springy, while the flavour is sweet, buttery and fruity.

It is unlike other cheeses of its kind, in that it is significantly taller. This means that the influence of the rind does not dominate, allowing the flavour of the sweet, supple paste to shine through. In an in-house blind tasting with Pont l’Evêque, the Pavé d’Auge won hands down.

Pavé d’Auge is the ancestor of its more famous cousin, Pont l’Evêque, and has been ever-present locally in Normandy since at least the 13th Century.

Our version is made by Fromagerie de La Houssaye, based in Calvados in Normandy. This is a region that is world-famous for the quality of its dairy produce. The high rainfall that blows in from the Atlantic coast makes perfect pasture for the Normande cows, with their milk that’s high in butterfat and proteins making it perfect for cheese-making. The Fromagerie collects milk from local dairies that farm only the traditional, Normande breed of cow, fed only on grass from the rich meadows in Summer that is later hay-dried in Winter.

Pavés are square-shaped cheeses that are named after the cobble stones that can be found at the centre of all ancient, French towns.
