Petit Gaugry is a baby version of the Gaugry Époisses. It is washed in the local Marc de Bourgogne eau-de-vie. It possesses all the pungent delights of an Époisses, but can easily be consumed in one sitting, thus avoiding the wrath of a non-smelly-cheese-loving partner.
Rules surrounding names in France are strictly enforced, and the AOC for Époisses does not allow it to be made in this tiny size. Petit Gaugry'smethod of production is the same though, and the tiny cheese is every bit as delicious as its big brother. Perfect for one sitting. We have certainly never had any trouble polishing off this cheese in one go!
