The Macelleria Falorni is situated in Greve in Chianti, a small town to be found between Florence and Siena, deep in the heart of Tuscany. Here, Falorni dry, cure and sell their world famous meats.
The Salame Piccante is cured with chilli and paprika to bring a gentle warmth to the meat. Deliberately subtle, the heat is not turned up, but kept on a gentle burn, to enhance, rather than overpower, the rich, sweet, flavours of the cured pork.
