To pair with Champagne Louis Brochet Brut NV;
250g - Cow, Raw Milk
A soft, creamy, and delicate unpasteurised cheese from Champagne, with an 'appley' aroma.
To pair with Pouilly-Fumé, Château de Tracy 2019;
SAINTE MAURE DE TOURAINE
250g - Goat, Raw Milk
A classic from the Loire, a region knee-deep in great goats' milk cheeses dating back to the Saracen invasion of France in the 8th century. It is so delicate when young that it is held together by a thin straw.
To pair with Vin de Savoie, Mondeuse Terres Rouges, Jean-François Quénard 2019;
COMTÉ ST ANTOINE
250g - Cow, Raw Milk
An unpasteurised French cheese from the Jura mountain region: smooth, mellow, nutty, and with a long finish.
To pair with Côtes du Marmandais, Château de Beaulieu 2012
160g - Sheep, Raw Milk
The flavour of the cheese is reminiscent of the air in the caverns where it ripens, and the mould grows naturally. Round, deep and perfectly balanced: big, creamy chunks of the paste dissolve on the palate like sharp, soothing milky lozenges.

The Fine Cheese Co. is a maturer, wholesaler, retailer and exporter of artisan British cheeses. We are based in historic Bath, founded by the Romans and famous for its beautiful Georgian architecture - alongside Venice the only World Heritage city in Europe.
We have been cheese specialists for thirty years, and from the start we have nurtured and supported the cream of British cheese-makers. We stock over a hundred hand-made British cheeses: from classic gems such as Mrs Kirkham's Lancashire, a traditional cloth-bound territorial cheese, to Baron Bigod, a raw milk Brie-style cheese.
