Paul Georgelet’s goats’ milks cheeses begin life plump and ‘moussey’, with the thinnest of natural rinds. This unusually shaped goats’ cheese arrives at our maturation rooms as few as six days’ old. Light lemon acidity slowly transforms to savoury, aromatic top notes above a typical fresh, goat dairy base. With a touch of affinage, the rind becomes slightly dry to the touch, holding in the bouncy paste and adding extra texture on the palate. More intense goat flavours are noticeable at this age, but they are still beautifully rounded and far from aggressive. The thicker, denser texture at this age really cries out for a glass of Sauvignon Blanc!
