At The Fine Cheese Co. we have been on a mission to source and supply a true, artisan Manchego: one that defines the style, and is the Manchego of both our memory and our dreams. At around three months, the paste of this Manchego still has a light almost springy texture, and the sweet, milky, floral tones are more prevalent.
QUESO DE PRIA - TRES LECHES AZUL
250g - Cow / Sheep / Goat, Pasteurised
Tres Leches, meaning ‘three milks’, is made at the edge of the Picos de Europa National Park. The mixed milks give a deep, complex flavour, the blue veining give a gentle, warming spice, and the light smoking of the rind provides a third layer of flavour.
MAHON MENORCA CURADO
210g - Cow / Sheep , Raw Milk
Menorca’s most famous creation. They are rubbed in oil and sweet paprika to develop their brick-coloured coat. The mature cheeses are full, spicy and piquant with a distinctively sharp and salty taste.
THE FINE CHEESE CO. MEMBRILLO (Quince Jelly)
170g - Made using only the finest hand-selected Spanish quinces.
Must be tried with Manchego, for Membrillo and Manchego are a partnership as successful as Don Quixote and Sancho Panza.
LUSTAU MOSCATEL EMILÍN SHERRY
35.5cl - 17% - The Moscatel grapes are laid out in the sun until they become raisins. Fermentation is arrested early, in order to keep the natural sugar of the grapes. Dark mahogany in colour, it is soft and sweet on the palate (slightly less’ treacley’ than Pedro Ximenez ). Reminiscent of honey, citrus and spices.
