Colston Basset Stilton cheese is hand-made by Billy Kevan and his team in Nottinghamshire. It is one of the last remaining hand-ladled Stiltons. Hand-ladling produces an intensely rich and creamy cheese, and the Colston Bassett flavour is deep, lingering and complex.
Old Winchester is based on a Gouda recipe, and is a powerful, fruity cheese, with a full and sweet flavour. Matured for at least 16 months to develop its fabulous crystalline texture.
The Merry Wyfe 200g – Cow, pasteurised, vegetarian
Curds from 2019’s Supreme Champion of the International Cheese Awards, Wyfe of Bath, are pressed, and then washed in cider produced by Graham Padfield on the family farm. A thin orange rind develops, imparting a slightly meaty, yet fruity, flavour. Aptly named after Shakespeare’s comedy, The Merry Wives of Windsor. Who wouldn’t be merry after a cider bath?

Sinodun Hill cheese is sweet, almondy and complex, with a thin, beautifully wrinkly coat that develops natural spots of blues, greys and greens over time. Sinodun Hill also has a fabulous texture: smooth and rich, mouth-filling, but never cloying or claggy. All in all, a truly lovely cheese!
