Sharpham Dairy has long been famous for its Jersey and goats’ milk cheeses, but more recently, Debbie decided to experiment with local sheep’s milk, to create a new cheese. She already makes a number of different styles, producing a dizzying array of cheeses simultaneously, but Washbourne is a departure in style.
It is a washed curd cheese, which means that hot water is added during the make to reduce acidity, creating a supple, silky texture and a delicate honeyed taste. This method of cheesemaking allows the light and delicate nature of sheep’s milk to shine.
The judges at the British Cheese Awards 2019 certainly agreed, crowning Washbourne ‘Best Modern British Cheese’ that year. Washbourne is made on the Sharpham Estate, which is gloriously situated on the slopes of the River Dart, just downstream from Totnes. The estate is home to a stunning vineyard and winery, as well as the dairy which produces Debbie’s award-winning cheeses.

We will hand pack and deliver the next day, we must have an alternative delivery instruction for any private address, such as "leave in porch/on step/with a neighbour".
