SUPREME CHAMPION ARTISAN CHEESE AWARDS 2017
Award-winning Berkswell cheese takes at least four months to mature, and is sweet and nutty, with a hint of caramel and a definite tang on the finish.
Similar to a Pecorino, Berkswell is made at the aptly named, 16th-century Ram Hall, in the heart of England.

Produced at the foot of the Säntis mountain near Appenzell and aged for 8 months, Stärnächäs is slightly supple and smooth, with an underlying sweetness and a rich, deep flavour.

SUPREME CHAMPION BRITISH CHEESE AWARDS 2017
As a keen cyclist, Somerset cheesemaker Roger Longman named this ashed cheese after the classic bike races on the cobbled roads, or ‘Pavés’, in Belgium and France. Although it resembles a Valençay, the cheese is in fact made from ewes’ milk, which gives it a mousse-like texture and a smooth, delicate flavour.
