Super-stylish, lusciously sweet, yet perfectly balanced white wine – a very rare style of Passito made using Glera, Bouschera & Bianchetti varieties (normally only used in sparkling wines) which give a real elegance and nesse to this luxurious-tasting drop.
Grapes: Glera, Boschera and Bianchetta from the regions of Conegliano and Valdobbiadene.
Winemaking: The very ripest grapes are hand-picked into tiny crates to prevent damage to the berries. After a rigorous selection, only 60% of the grapes make it to the "Appasimento" (drying process where the grapes are partially dried on straw pallets, in dark, well air-conditioned rooms in order to concentrate sugars and avours before vini cation). In December, semi-dried grapes are gently pressed and the juice fermented and aged in seasoned oak barrels.
Tastine Note: A deep golden yellow in the glass. Aromas of ripe fruits, banana, apricot with raisins and notes of almonds. Sweet yet savoury on the palate, aromatic and velvety.The per- fect wine to serve with almost any aged farmhouse or strong blue cheese.
