The ripening harkens back to the area’s tradition of hiding cheeses from hungry looters and keen tax collectors.

    Boozy and fruity. Approachably tangy and milky, with a spicy finish. An ubriacco (‘drunk’) cheese, this organic wheel is bathed in wine and buried in Cabernet and Merlot marc. The method is traditional, from a time when cheeses had to be hidden from looting soldiers and pilfering tax collectors.
