Each week our specialists travel across Britain and Europe to meet the cheesemakers and affineurs we represent, to specify what we are looking for, and to taste and agree what we are selecting.
We have our own maturing rooms, and some 15 people iron, rub and turn our cheeses there.
Our specialists choose when each cheese is at its peak perfection for you, our customers.
And they and our technical team are at the ready to provide you with in-person advice, guidance and training.
