Newly independent, 30 years ago it settled in a beautiful location on Dorstone Hill, overlooking the River Wye in Herefordshire. The cheese takes its name from this rural idyll.

Product Description

Award-winning Dorstone cheese has a curd that's snowy-white, a texture like ‘ice cream’, and a flavour which is mellow and creamy with a lemony freshness.

The cheese is made to a very slow lactic set recipe; and the curds are pre-drained, before being gently placed into moulds, to create Dorstone’s light, almost mousse-like texture.

After being removed from the moulds, Dorstone is coated in ash, and then ripened to develop a faint veining reminiscent of Carrera marble!

Charlie uses kids’ rennet rather than calves’, as he feels it allows the cheese to stay more true to the flavours inherent in the milk.

In 2013, The Fine Cheese Co. entered Dorstone into the competition at the Mondial du Fromage in Tours, in the Loire: the heart of French goats’ cheese making. We were delighted when it was awarded a Gold Medal, proving that Dorstone is as fine an example of an outstanding goats’ milk cheese as any made by a Frenchman.

Who are the founders of The Fine Cheese Co.?

We were founded in 1990 by Ann-Marie Dyas, a renowned judge at both the British and World Cheese Awards and winner of the Guild of Fine Food Lifetime Achievement Award. Ann-Marie was committed to the survival and growth of traditional cheesemaking and to introducing and sharing farmhouse cheeses, as well as the stories behind them, to as wide a public as possible.

Ann-Marie's mission was "To seek out the best, and, when it’s been found, to keep looking". This same tireless pursuit of excellence is the core value across the company.

From the producers we choose to work with to the coffee we serve in our café, we want to give the best possible experience, while continuing to find ways to improve upon it.

The Fine Cheese Co. is based in historic Bath, England. We were founded 30 years ago by Ann-Marie Dyas, a judge at the British and World Cheese Awards and recipient of the Guild of Fine Food Lifetime Achievement Award.
