The outer rind of this cheese is coated in the aromatic herbs of the Corsican ‘maquis’, or scrubland.
The ‘maquis’ of Corsica consists of dense evergreen shrubs, herbage and more than 42 varieties of orchid.
The birthplace of Napoleon Bonaparte is the most mountainous of all the Mediterranean islands, and is noted for its warm climate and gorgeous coastlines. Records show that sheep farming and cheesemaking have been a key part of the region’s economy going back to the days of the Etruscans, and likely much earlier than that.

N.B. A whole Brin d'Amour weighs approximatley 750g to 900g. Smaller weights are a cut piece of a whole cheese.
