Product details

There are only 600 horned Allgäuer Braunvieh cows left in the world, and this cheese helps to ensure their survival. These unique mountain cows belong to a biodynamic cooperative who feed them only their farmstead hay, and leave the calves at their parents’ sides.  The milk is delivered to cheesemaker Albert Kraus, who makes the Hornkase specially for this cooperative.

Mature and savoury at over ten months old, it’s a powerful example of Alpine heritage. Washed in a mixture of elderflower cordial and burnt hay ash, the dark exterior contrasts with the golden paste.
