St James
200g - Sheep, Raw Milk
To most people, spring means the emergence of daffodils and longer days, but, to cheesemongers, it means the long awaited and welcome return of St. James. Made in Cumbria by Martin Gott and Nicola Robinson from the milk of their own flock of Lacaune ewes, new season St James is milky, yeasty, fresh and delicious. As the season develops, it becomes fuller-flavoured and more deeply savoury.
Fougette au Thym
150g - Goat, Raw Milk
Moussey, rich and sweetly herbal with a touch of approachable saltiness. This 'dumpling' of young goat’s cheese is given just a touch of thyme oil. It is then ripened only to the point that the herbal flavour lingers without dominating the milky flavour of the cheese itself.
Appleby's Cheshire
250g - Cow, Raw Milk
A unique, complex Cheshire, with a crumbly texture and a zesty, full-bodied and tangy flavour. Made by three generations of the Appleby family since 1952 and the only exclusively raw milk farmhouse Cheshire cheese remaining.
Lemon, Sea Salt and Extra Virgin Olive Oil Crackers
Intentionally subtle, so as to never overwhelm the cheese. Flavoured with a squeeze of lemon and a sprinkle of sea salt.
