A cheese often consigned to the kitchen, rather than granted pride of place on the cheeseboard, our Taleggio is a revelation. Made from the raw milk of several small local farms, by the village co-operative, right in the heart of Val Taleggio, the valley from which the cheese takes its name. Made by hand in tiny batches, it is a world away from its mass-produced cousins. The rosy, sometimes mould-mottled rind, encases a fruity silky paste, which may break down at the edges but remains crumbly and fresh-tasting in the centre.
*A whole Taleggio weighs approximately 1.8kg. Smaller weights are a cut of a whole cheese.
We unashamedly source, care for and sell the best cheese, because that is what we believe in. Our trained cheesemongers cut every piece to order, by hand, and wrap it in our waxed paper. We do this because it is most respectful way to treat this precious food.
